Sweet & Spicy Ribs with Grilled Artichokes

These Sweet & Spicy Ribs are a Summer staple like no other. Delicious ribs charred over a traditional grill slathered with our homemade family BBQ sauce. Enjoy this hearty meal with friends and a bottle of Dude’s Rosé.

Ingredients

  • 1 rack of ribs
  • 2 or more artichokes
  • 1 15 oz. can tomato sauce
  • 1 clove of garlic
  • 1 tsp.+ Garlic powder
  • 1 tsp. + Cayenne pepper
  • 1 tsp. + Crushed red pepper
  • 3 tbls.+ Worsteshire
  • 3 tbls. + White vinegar
  • 1/8 tsp. Liquid smoke
  • 1/8 c. honey
  • 1/4 c. brown sugar
  • salt and pepper

Directions

Preheat oven to 295. Dump all ingredients into a sauce pan except for the artichokes and the ribs and mix together over medium heat. All items with a “+” allow you to start with this amount and add more to your taste preferences. Heat until warm all the way through. Place ribs on a sheet pan and lightly coat each side of the ribs with salt and pepper. When the sauce is finished, using a basting brush, coat the ribs on each side with the BBQ sauce. Reserve remaining sauce for grilling. Add about one cup of water to the sheet pan, or enough until the water comes half way up the sheet pan. Place in the oven for 2 hours.

After one hour, begin to boil water for the artichokes. Add artichokes and reduce to a simmer. Allow to simmer for 40-45 minutes. The ribs and artichokes should finish up about the same time. Fire up the grill to a medium high heat. Remove artichokes from the pot and carefully (or with oven mitts) slice the artichokes in half top to bottom.

(Optional: add a spoonful of melted butter to either side of the artichokes to promote extra char and flavor.)

Place ribs and artichokes on the grill to finish cooking and char. Grill time is 30 – 45 minutes on medium heat. Artichokes should be flipped once. Continue to coat the ribs in sauce and flip them to desired charring. Serve with Dude DeWalt Rosé!
